คำถาม : ใบขนุน- อยากทรางว่า ใบขนุนสามารถทำให้ เนื้อสัตว์ เปื่อยนุ่มได้หรือเปล่าค่ะ แล้วมันมีสารอะไรในตัวใบขนุนค่ะ เพราะที่บ้านเคยเอาไปใส่ในต้มขาหมู เปื่อยเร็วมากค่ะ ขอบคุณค่ะ

คำตอบ : ไม่พบข้อมูลว่าใบขนุนมีเอนไซม์ช่วยย่อยเนื้อ (protease) สำหรับสารที่พบได้ในใบขนุน ได้แก่ flavanoids, anthocyanins, tannins, polysaccharides, proteins, saponins, sterols, glycosides และ lipids ค่ะ
